On Wednesdays We Wear Pink! If you’ve ever seen the infamous movie Mean Girls, you may have an idea what I’m talking about. If you haven’t, just know that studying for the CPA exam has made me slightly lose my mind, so I have come up with daily holidays to celebrate. Yes this may sound a little weird, but hey, why not celebrate everyday? Want in on the fun? Let me know what you think about the other days of the weeks that I am currently celebrating! Now what should you make when you’re feeling lazy this Saturday? Banana Crumb Muffins that is! You may have seen my Banana Walnut Pancakes I made a few weeks ago, well right after that adventure, we had some leftover bananas. I mean, don’t we always have a few pesky bananas hanging in our kitchen that we don’t know what to do with? Use up these bananas by making warm muffins in the morning. What a better way to kick start your morning that with one of these mouth-watering breakfast treats.
Ingredients (makes 10 muffins)
Flour: 1 1/2 cups
Sugar: 3/4 cup
Salt: 1/2 teaspoon
Baking Soda: 1 teaspoon
Baking Powder: 1 teaspoon
Butter: 6 tablespoons
Brown Sugar: 1/3 cup
Cinnamon: 1/4 teaspoon
Preheat your oven to 375 degrees. Then mix all of your dry ingredients in a large mixing bowl. Set this aside.
Take your bananas in a bowl and mash them with a fork. By using ripe or even softer bananas this process will be much smoother. Mash your bananas to eliminate as many chunks as possible, unless you really are keen on chunky muffins 🙂
You can then add 1 egg and 5 tablespoons of melted butter to your mashed bananas. The rest of your butter (1 tablespoon) should be leftover based on the ingredient list above. The last tablespoon will be used to make our crumb topping in a few steps and should not be melted.
Add your mashed banana mixture to your dry ingredients that you set aside earlier. Mix your ingredients up with a spatula by hand.
Next, get out your muffins tins; no need to spray them if they are non-stick. Add your muffin batter to your muffin tins. filling about 2/3 the way full. I filled mine a little more because I only wanted 10 muffins and had a little extra batter. I bet you could get 11 smaller muffins if you wanted with this recipe.
Now we need to make our brown sugar crumb topping! This topping really takes these banana muffins to the next level. It is super simple to make. You mix your brown sugar, cinnamon, a tablespoon of flour, and the last tablespoon of butter. Use a fork of your hands to press the ingredients together.
You want to mix your ingredients until you have a crumb-like texture.
Then you can sprinkle equal amounts on the tops of your muffin batter. Don’t worry about getting a little messy!
Bake for 18-20 minutes or until you can stick your toothpick in the center and it comes out clean! Carefully remove your muffins from the tins and let cool if you have any patience 🙂 They should come out very easily from your non-stick tins and be ready to eat! Don’t you agree the crumb topping makes the muffins looks just lovely!
I mean what makes a Banana Crumb Muffin even better? If it’s even possible, add a little bit of butter, which will most likely melt right away and there you go.
