I have been seeing so many of these flourless pancake recipes online and could not resist the urge to try them for myself! If you’re looking for a breakfast filled with protein, vitamins, and you can’t say no to a pancake; this recipe is for you! These are packed with the nutrients you need, but are just as good as those fluffy full-of-flour pancakes you would get at iHop. You literally only need three simple ingredients that most of you probably have laying around your kitchen anyways. When you tell your friends you made flourless pancakes, they literally won’t believe you!
Banana: 1 (ripe)
Strawberries: ½ cup (frozen or fresh)
Grab a ripe banana, peel it, and begin mashing it with a fork in your bowl. You want to get as many chunks out of the banana as possible.
Once you have a nice mushy banana in your bowl, you can add your egg. I tried this recipe first with liquid egg whites and it came out far too liquidy. I would highly recommend using an egg instead of egg whites.
Mix the egg and the banana together and then take your strawberries and dice them. You could use any other berries you have frozen or fresh for this recipe too! Now make sure to spray a cooking spray on your skillet and then you can pour ¼ of your mixture, or however large you want your pancakes to be, in the skillet.
This definitely helps to cook the pancake the whole way through. When you start seeing the bubbles on your pancake, you can flip it over and let it cook for a few more minutes. Repeat this process for the rest of your batter! Add powdered sugar, syrup, or more fruit to top these pancakes!
These pancakes were so much more tasty than a regular pancake and I didn’t have that super full/stuffed feeling that I usually have after eating 4 pancakes! I’m definitely going to be mixing this into my breakfast routine and will try again using egg whites, but for now definitely use an egg.
