Colorful 10-Minute Lunch!

Need a quick packed lunch?

Do you need something new and colorful to pack with you for school or work? I think I am the world’s biggest fan of peanut butter and jelly, but a girl can use a little variety! I decided to prepare most of this salad the night before and sprinkle the cheese and pack some dressing the next morning before I ran to class. This literally takes 10 minutes to prepare the night before and is definitely a nice change to my quite repetitive routine!

Romaine Lettuce: 2 cups
Tomatoes: 1/2
Green Peppers: 1/2
Parmesan Cheese: a few shakes
Kraft Light Zesty Italian Dressing: 2 tablespoons

1. Dice tomatoes and green peppers the night before. I only used a half of a tomato and a pepper (easing into the whole veggie thing), but put in any of your fresh vegetables that you have lying around in your refridgerator!
2. In the morning, toss your pre-cut vegetables with your Romaine Lettuce (or your preferred salad) in a plastic container.
3. Sprinkle some Parmesan Cheese and pack your dressing in a small container to pour over when the lunch bell rings!
Take this easy lunch with you anywhere and feel healthy as you push through the rest of the day!
